Juan Pajarito Xaltepec
Born in Cholula, Mexico, in a family of farmers, Juan moved to the US at 16 and immediately began working with his father in kitchens. With 16 years of restaurant experience, Juan joined Overthrow Hospitality five years ago as chef of Avant Garden. Now he's also the Executive Chef at & Beer, our mushroom restaurant.
“If you love cooking, you never get bored of learning,” he says.
